Soft, moist, and intensely banana-flavored, this is exactly what good banana bread should be. This recipe is perfect as a quick dessert with coffee, a sweet breakfast, or an on-the-go snack. The use of pureed banana gives the cake an even consistency and a distinct banana flavor without the need to mash the fruit with a fork.
This is also a good way to use our banana puree not only for smoothies or oatmeal, but also for homemade baking.

Banana bread recipe
Pour the mashed banana into a large bowl. Add the eggs, sugar, and melted butter. Let the mixture cool slightly before mixing to prevent the eggs from curdling. Mix thoroughly with a whisk or spatula.
Next, add the flour, baking soda, and a pinch of salt. If you prefer a more spicy flavor, you can also add a dash of cinnamon or vanilla. Mix everything briefly, just until combined. This is important because over-mixing can make the bread heavier and less fluffy.
Pour the prepared mixture into a cake tin lined with baking paper.
Banana bread – how long to bake?
Preheat the oven to 175-180°C (350-390°F). Bake the bread for about 50-60 minutes.
Towards the end of baking, check the center with a skewer. If it comes out dry or slightly moist, the banana bread is ready. After baking, set it aside to cool for a few minutes.
Chocolate icing and toppings
If you'd like a more dessert-like version, you can drizzle the bread with melted chocolate. Dark or dark chocolate works best.
Melt the chocolate in a double boiler or heat it very gently in a saucepan. Adding 1-2 tablespoons of milk or cream will make the icing glossier and softer.
Pour the glaze over the bread only after it has cooled slightly. Finally, sprinkle with chopped walnuts or almonds.
